For those who are not familiar with Kwanzaa, for starters, it is an African-American cultural weeklong celebration. The seven principles are as follows, Umoja (unity), Kujichagulia (self-determination), Ujima (collective work and responsibility), Ujima (cooperative economics), Nia (Purpose), Kuumba (creativity), and Imani (faith)
Those are the principles of why Kwanzaa was organized about 55 years ago. Those were the guiding lights and principles that are imbued that by believing and adhering to those principles, Dr. Karenga assures that the African-American community will be a strong and united tight-knitted community that ensures camaraderie for generations to come.
Foods served during Kwanzaa
Traditionally, during its early inception in the late ’60s Kwanzaa celebration involves food that is influenced by Swahili or East African traditions. Over the years, the African-American versions introduced a variety of recipes that are more familiar to the general masses in the United States like African diaspora, Catfish, collars, macaroni, and cheese. And after few more years Jerk chicken, gumbo, accras, feijoada which were not of Swahili descent find the tables of African-American communities.
Technically, there are no rules set as to what foods are served during the celebration. But to adhere to the principles and concepts of Kwanzaa, fruits, and vegetables are a staple. Vegetables like okra, yams, squash, sweet potatoes, and some bananas are usually served. With the influx of African ancestry which was not Swahili in nature, several food items are served at the table in commemoration of Kwanzaa.
